Skewered Chicken Satay

Crushed Peanut Ginger Sauce
 

Sauce for 12 Skewers

1-cup chunky peanut butter
1-tablespoon soy sauce
1/2-teaspoon hot sauce
4-tablespoons honey
2-tablespoons raw sesame oil
2-tablespoons sweet rice vinegar
2-tablespoons chicken broth
1-tablespoon powdered sugar

Method:

        In a large bowl add all ingredients; whisk until well emulsified.  Age sauce at room temperature for 1-hour, re-whisk and baste skewers just as they come off the grill.  Sprinkle with chopped cilantro and serve.
